Irish Champ Recipe
8 medium potatoes
1/2 cup milk
5 tablespoon butter
a bunch scallions or green onions, chopped
Peel and cube potatoes and boil in salted water until tender. Drain and mash slightly. In a small pan, heat milk and butter until butter is melted. Add chopped scallions. Fold mixture into the potatoes until well blended.
Enough For 6 people.
